Do not only replace the alcohol
Spirits provide warmth, length and texture. A good alcohol-free cocktail rebuilds those qualities with tea, spice, bitter aperitifs, fruit and carbonation.
Build in layers
Combine a flavourful base with acidity, a little sweetness and a dry or bitter finish. Strong tea, verjus, ginger and tonic are useful building blocks.
- Base: tea, alcohol-free spirit or fresh juice.
- Acidity: citrus, verjus or shrub.
- Body: honey, aquafaba or concentrated fruit.
- Length: soda, tonic or kombucha.
Serve with equal attention
Use good ice, suitable glassware and a fresh garnish. Alcohol-free is not a compromise; it is its own category where balance matters just as much.
