Let the nose taste too
Aroma shapes much of what we taste. Express a citrus peel over the glass so its oils land on the surface, then run it around the rim if appropriate.
Connect the garnish to the drink
Use an ingredient already present in the cocktail or one that logically complements it. Mint lifts fresh highballs, olives underline a savoury Martini and pineapple signals a tropical profile.
- Use fresh, undamaged herbs.
- Keep edible garnishes clean and chilled.
- Secure large garnishes properly.
- Leave smoke and fire to experienced makers.
Less often looks stronger
One neat twist or sprig has more impact than a crowded glass. The finish should support the drinking experience without getting in the way.
